Artichokes (Cynara scolymus), like dandelions and milk thistle, belong to the daisy family. They were systematically cultivated 2000 years ago and today they only exist as cultivated plants. Artichokes grow up to two meters tall. The budding inflorescences sit on their stems and are prepared as vegetables and go perfectly with salads or pasta, for example. The leaves grow to around 80cm long and are processed into tea and extracts for naturopathic therapies. The dried leaves of the plant are used for artichoke extract. These contain caffeoylquinic acids such as cynarin and chlorogenic acid, flavonoids and bitter substances. This mixture has proven to be particularly positive for the human body and has traditionally been used as a natural dietary supplement for 2000 years.
